I have found over the years that the thing that ruins a pot of coffee is sitting on the hot plate, keepng the coffee warm. I now turn off the coffeemaker after I pour my first cup and reheat the second, etc., in the microwave...tastes much better. I once heard that coffee shops will only keep and serve coffee up to 18 mins. after brewing. After that it is dumped and a new pot made.

First they use public water, second the water temp they set the coffee maker to makes a huge difference. That is why even if you buy the coffee they sell and you make it at home it will still taste different. They make it at a very high temp almost boiling.
